Inside Out Pepper Bake

Today was snowy and so cold. We were going to drive to Evansville to see Jason and family, and to see Ransom wrestle. However, I’ve had some kind of bug and ended up cancelling the trip. Hopefully we can go down next weekend end enjoy some time with them.

So I needed something easy for dinner, and comfort food was on my list. I had cooked ground beef, and leftover sticky rice, so I was all set. Soon we had a warm, comforting dish. Here’s my recipe:

Inside Out Stuffed Pepper Bake

Preheat oven to 375

Mix together a pound of cooked ground beef, a cup of cooked rice (see note at end), some salt and pepper. You can add 2-3 chopped bell peppers, any color, or, if you like, stir fry a bag of 3 pepper & onion blend until just thawed and warm. Add to ground beef mixture. Add about a cup of shredded cheese, mix well. If you have a can of diced tomatoes, add those now. Add a jar of spaghetti sauce and mix well and pour into a well greased 13×9 Pan.

Bake times depend on a couple of things. If you don’t have cooked rice, you can add about a cup of instant rice. If you use fresh peppers and uncooked rice, I would cover the dish with foil and bake for 45 mins., uncover and sprinkle another cup of shredded cheese over and bake another 10-15 minutes or until hot and bubbly. If your rice is cooked, you can bake uncovered 30 minutes, add the cheese on top and bake another 10-15 minutes til hot and bubbly. Hope you enjoy!

My cousin is in the hospital today. He had a stroke and is having heart problems. Life is very difficult. Hug your loved ones and be kind to others without expecting anything in return. You’ll never regret doing those two simple things.
