Easy as Apple Pie

Allison’s mother sat at the table and leaned on her elbows, looking up at Allison. She smiled thinly, and Allison smiled brightly back.

“So you baked?” she asked.

“Yes! I baked an apple pie. I even made the crust myself. And I want you to try it. I think it is going to be really good,” Allison said.

Allison cut a generous slice of pie, put it on a plate and thrust the plate in front of her mother.

Taking up her fork, Allison’s mother realized she didn’t trust Allison’s optimistic opinion about the pie. No one bakes a great pie the first time, she thought.

Allison watched with anticipation as her mother cut a bite and put it in her mouth. She watched as her mother chewed slowly, then laid the fork down on the plate.

“That is probably the best pie I have ever had,” her mother said, and Allison let out a loud whoop! “Sit down and have a piece with me. You are amazing, you know that, Allison?”

Allison felt both proud and relieved. She did it!

  1. Thanks for joining in Lisa. Loved this. Reminds me of a victoria sponge I made for my Mum which was absolutely perfect, and the best I’ve ever made. I put it down to using butter (EXPENSIVE!) rather than margarine and also it was made with love because it was for my Mum!
